Martin Luther King dedicated his life to love and justice between fellow human beings.
(1) What's the difference between using "between" and "among" in the above sentence?
(2) Which would you use?

I'd say that "between" would show the relation as it pertains to pairs of individuals who are members of the larger group (fellow human beings). "Among" shows a more general relation looking at all people at the same time.
I'd probably choose "among" in this context.

Thanks Pete, I think the speaker (Edward Kennedy) had this binary opposition (the Black vs. the White) in mind, thus he chose "between".

And here, Pete?
"What are the main differences between blackbirds, crows and jackdaws?"
And:
"I shared the money between/among all my friends."

"between" is used esp. for binary distinctions.
