Please explain:

In a conversation, when do you actually use "the thing is".... blah!blah! blah!
Sometimes, I'm hesitant to make conversation with other people because I don't want them to know my grammatical error.

This phrase is not really necessary in a conversation. It is a way of drawing attention to what the person is going to say. Similar expressions are: "The point is...blah!blah...", "What I mean to say is....blah,blah.."
I think it is more important for you to practice speaking than to worry about making errors. :)
