When do I have to use Victory word like a countable noun and when like an uncountable noun?

I would use it as a countable noun to denote particular events, and as a non-countable noun to denote the abstraction, e.g.
1. Nelson's victories at the Nile and Trafalgar display different aspects of his naval genius.
2. Victory is always sweet.
