What's the meaning of to die for in the sentence above.

The phrase is popular slang. Literally it means that I would give my life to have/see/do/be the thing mentioned. Of course, this is an exaggeration, isn't it? Thought of this way, the phrase is quite silly.

However, the saying in this particular movie is also a pun (a play on words), because what is being referred to is something that will likely kill Simba.

Good movie, that one!

I think I just found the meaning:

to die forSl. important or desirable enough to die for; worth dying for. This chocolate cake is to die for! We had a beautiful room at the hotel and the service was to die for.
