I am troubled by equating something with the most.

Because something suggests an undetermined or unspecified thing, it cannot be the one thing you like the most--that would make it a particular thing. You should compare non-specific with non-specific, and specific with specific.

I believe you could say either of these sentences and be reasonable:
Walking on the beach is something I like a lot.
Walking on the beach is the thing I like the most.
