Hi there....
This is a very simple question, yet confusing.
I read in an English book in a Q/A form:
Q: Is this A: It is ( is it a must that we have to use "this" matching the Q?)
Q: Is that A: It is....
My question: Is it OK to use pronoun other than that of question?

Also:
This is my eyes/ These are my eyes.
We smell something with our nose(s)???

(This/that are both singular. The verb, "is" agrees. Is this/that...? would be answered with: This/that/it is.... These/those are both plural. A question, "Are those/these...? is answered by: "These/those are...).

Also:
This is my eyes (Incorrect).
/ These are my eyes. (Correct).
We smell something with our nose(s)??? (Noses (plural) agrees with "we." It is not uncommon to hear, "We smell with our nose" because everybody understands that each of us smells with his/her own nose).
