Which is correct:
1-John when in his office is a nice man; but John when driving, is unbearable.
2-John, when in his office, is a nice man; but John, when driving, is unbearable.

John is a nice man when he is in the office, but he is unbearable when he is driving.
Keep it simple.

Actually, I always say and write what you have written. But I was trying to figure out how postmodification could be used in cases like this. Would you say my sentences are grammatically wrong?

Yes, you can use post modification to say the same thing. I think you need to use your sentence 2; separating the modifier with commas seems necessary.
