1) I just want to do some things to make it up to her, because in the past I hurt her so much.
- Is this grammatical?
2) I think he’s not very serious about his marriage at all.
- Is this ok to say?
3) I think she and I are a nice couple.
- Is this ok to say?
4) When is your birthday?
- It’s twenty-seventh – September-1982.
- Is this grammatical?

- Is this grammatical? (It's OK. You could also say, "something" instead of "some things").
2) I think he’s not very serious about his marriage at all.
- Is this ok to say? (Yes))
3) I think she and I are a nice couple.
- Is this ok to say? (Yes. You can also say, "...make a nice couple").
4) When is your birthday?
- It’s twenty-seventh – September-1982.
(You have a birthday every year. Yours is the twenty-seventh of September. Your birth date is/was September 27, 1982).

Don't we have to say;
- I don't think at all (that) he's very serious about his marriage.
?
I was taught that we can't say the form [I think that ... not ...] in any case.
Am I misinformed?

I think that the four sentences below are acceptable.
Number 2. is my choice. Number 1. is the least likely as it makes your thought negative rather than making his seriousness negative.
1. I don't at all think that he's very serious about his marriage.
2. I don't think that he's very serious at all about his marriage.
3. I think that he's not at all serious about his marriage.
4. I think that he's not serious at all about his marriage.
