1-Since the last Monday, they had known all about it. (This would normally be considered incorrect. If you include "of January, of the year" etc. it could work.
Since the last Monday of January, they had known all about it).
2-Since the Monday before, they had known all about it. (This is OK if everybody understands "before what?").

3-Since a month ago, he has been acting strangely. (Correct).

4-Since a month before, he had been acting strangely. (Same as 2.).
5. Since the last month, he had been acting strangely. (Same as 1.).

The sentences don't sound like proper English to me. I would change them to:-
1) They had known all about it since last Monday.
2) From Monday last they had known all about it.
3) He has been acting strangely for a month now.
4) From last month he had been acting strangely.
5) Since last month, he had been acting strangely.

Putting the since- clause at the beginning makes the sentences sound formal. It is more natural to put this clause at the end.
They have known all about it since last Monday.
