Which of the two should I use?
Smiling and shuddering from thrill, we sailed from/out of the marina, followed by the thrilled and envious looks of the people ashore.

Smiling and shuddering from thrill, we sailed from/out of the marina, followed by the thrilled and envious looks of the people ashore. As a matter of style, I would choose out of the marina. This is more graphic, I think, than from. I'd also advise changing the opening clause to "Smiling and shuddering with excitement,..."
