Hi there,
How do you say that when a person has thought of a plan for a long time but in the end he suddenly, for any reason, changes his mind and makes a final decision which is far from the original one?

Sometimes people describe this situation with the idiom, "he did an about face". This metaphor refers to the pattern when people marching turn 180 degrees and head back in the opposite direction.

People will also refer to a total change of mind by saying that the person changed his mind 180 degrees or that he reversed his opinion. The way you described it is fine also.
