Could one say:
1-This month I jog every day.
instead of:
2-This month I am jogging every day.

I think 1 could be used if one is talking of a programme.
(Next month I swim every day and the month after that I do yoga every day.)

Yes. It is common to use the simple present tense to refer to items in a schedule. Another example of this sort of use is, "The plane from Baltimore arrives at 10:15."
