"Between" is used when we talk about 2 things, right?
So is "between" here correct: "What's the difference between A, B and C?"
Should I use "among"?

There's more than one use of "between". Your would be the second one here:
• preposition & adverb 1 at, into, or across the space separating (two objects, places, or points). 2 in the period separating (two points in time). • preposition 1 indicating a connection or relationship involving (two or more parties). 2 by combining the resources or actions of (two or more parties).

Hello WZ,
Besides, I'd say that the difference between is a set expression, which is logical, because we compare two things anyway - if there are A, B, C, D, we compare A and B, A and C, B and C etc.
